From Beans to Bliss!
In the misty mountains of Indonesia, farmers rise early to pick ripe coffee cherries. These cherries, bursting with flavor, are carefully processed to reveal green coffee beans. Under the tropical sun, they dry slowly, absorbing the essence of Indonesia's rich landscapes.
Once dried, these beans travel worldwide, prized for their unique tastes. Indonesia boasts a diverse array of coffee bean types, each distinct in flavor and character. From Sumatra's earthy and full-bodied beans to Java's balanced and chocolaty brews, and Sulawesi's rich and nutty flavors, Indonesian coffees cater to a wide range of tastes. Bali offers smooth and sweet varieties with floral notes, while Flores impresses with fruity and vibrant profiles.
These beans, nurtured in Indonesia's fertile soils and unique climates, reflect the country's rich coffee-growing heritage and continue to captivate coffee enthusiasts worldwide with their exceptional quality and diversity.
The Process
Indonesia’s coffee richness doesn’t stop at origin, it continues through the art of processing.
Each method brings out different dimensions of flavor and aroma.
Here are three traditional methods used by our farmers:
Full-Washed
Freshly harvested cherries are pulped to remove their skin and fruit. The beans are then soaked in water, allowing natural fermentation to dissolve the remaining mucilage. After thorough washing, the beans are dried on raised beds or patios under the sun.
Taste Notes: Clean flavor, fruity notes, low acidity
Semi-Washed
Also known as pulped natural, this method retains part of the mucilage after pulping. The beans are dried with this sticky layer still attached, allowing gentle fermentation during the drying stage. The amount of mucilage left varies, creating “yellow honey” to “red honey” profiles.
Taste Notes: Medium body, floral hints, earthy undertones
Natural
Cherries are dried whole with the fruit still intact, allowing the sugars and flavors to infuse the beans over several weeks. Once dried, the outer fruit is removed to reveal beans rich in complexity and sweetness.
